Chef

Exterior of Yacht
  • Assist 1st mate with exterior of yacht when necessary or available
  • Assisting stew with interior of yacht with necessary or available
Galley
  • Responsible for the galley of yacht
  • All galley supplies to be Captain approved, i.e. cleaning supplies, utensils, cooking equipment, etc.
  • Maintain all galley cooking equipment, i.e. oven, microwave, food processor, blender, pots/pans, etc.
  • Keep all cupboards/cabinets clean and organized as owner/guests may open at anytime
  • Avoid going under bench storage in galley when owner/guests are on board
  • Label and date food in refrigerator/freezer
  • Keep refrigerator/freezer and crisper clean and organized as owner/guest may open at anytime
  • Assist stew in keeping the mirrors cleaned by avoiding fingerprints
  • Provisioning of food/drinks for owner/guests with help from the stew
  • Keep galley as neat as possible as it is a pathway to the VIP stateroom
  • Prepare great tasting, attractive cuisine for owner/guests
  • Meal planning with input from owner/guest preference sheet and crew
  • Hors d’oeuvres pre-dinner for owner/guest at cocktail time if requested
  • Talk with owner/guests about menu
  • Prepare sample menu to go as supplement in brochure
  • Clean galley post dinner so it is clean and ready for next day
  • Detail galley after owner/guests depart
  • Pay attention to owner/guests likes and dislikes
  • Pay attention to proportions and quantities, i.e. prevent overbuying or being wasteful of food
  • Keep a supply of owner preferred food on board
  • Visit owner/guests at dinner to see how everything is
  • Prepare yacht before and after travel and changing sea conditions while in marina or on anchor
